220 g sugar
280 g flour
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/2 cup sultanas soaked in dry cider to cover
1 Granny Smith apple, peeled and sliced
Zest of a lemon
Fold into mix.
Bake in loaf tin at 180* for 1 hour.
